when i first put the falafel in the oil it was working just fine. the patties held together nicely once everything was mixed.
but then, the longer they fried, the more they fell apart. i ended up with a big pile of oily, crispy falafel crumbles.
i put them on my overcooked pita, threw on some tomato and spinach, and they were...just fine.
When I tried to fry the falafals in olive oil they fell completely part, too. It made me mad--then I tried baking the little patties on a cookie sheet,. Much better!
